Cool climate customers are required to ship reefer between March and November. It is the second oldest winery in Spain and the oldest in Andalucía. Focused on producing the finest wines in Andalucía from the Pedro Ximénez grape, the current 8th generation of the family upholds the tradition established by Diego de Alvear y Escalera several centuries ago.\r\n\r\nDue to the abundance of natural sugars that are accumulated during the ripening of Pedro Ximénez, the wine will reach 15% alcohol naturally, without the necessity of adding any extra alcohol. This is the key to Alvear’s Fino and Amontillado, and the intensity of their Oloroso. By contrast, the Palomino used in Jerez typically only reaches 11% alcohol through the natural fermentation, and needs to be fortified to reach a standard 15% for Fino. Considering most of the alcohol used for fortification in Spain is low quality, the fact that Alvear does not fortify most of their wines leads to an extremely pure final product. The Pedro Ximénez also adds a personality and character to the wine that Palomino cannot achieve.\r\n\r\nAfter the fermentation and winter, the wines are tasted and classified for ageing. The wines are introduced into 512L American oak barrels, some of them in the system of criaderas and soleras.\r\n\r\nThe system of criaderas and soleras is the traditional method in Andalucía for blending and ageing this style of wine. This is a dynamic ageing system that is very slow and laborious. It is based on periodic \"sacas y rocíos\" (rackings) between tiers of the criadera and solera, which blends the wine with the goal of producing a singular wine.\r\n\r\nEach \"criadera\" is equivalent to one phase of the ageing process. The system typically consists of four to six stages. Each criadera is comprised of a certain number of large format American oak barrels that are stacked on top of each other in tiers. The tiers, or rows of barrels that are stacked on top of each other, are denoted by their proximity to the floor of the winery. The bottom tier, the tier that the wine is removed and bottled from, is called the solera.\r\n\r\nEach subsequent tier on top of the solera is called the first criadera, the second criadera, etc. The wine is first stored in the highest criadera, and when the winemaker judges that it is ready to be moved to the next level. Each barrel is filled 2/3 of the total volume, in order to promote the growth of flor in the case of Fino. In the case of Oloroso, the barrel is left partially empty as well, in order to promote oxidative ageing. Amontillados are made by first producing a Fino with flor, and letting the flor grow until the wine runs out of nutrients to sustain the flor. These conditions produce exceptionally balanced wines with ageing potential due to their concentration and acidity.\r\n\r\nGarnacha, most famous internationally for its French name Grenache, is a grape cultivar that was most originally planted in the Kingdom of Aragón in the northeast of Spain during the Middle Ages. At the time, the Mugas were in the negociant business of buying, blending, and ageing wine. Soon after the foundation of the cellars they started production of their own estate grown wines. The winery is still owned by the Mugas and every single aspect of its operation is controlled and overseen by the family.\r\n\r\nFrom a production point of view, they are one of the most traditional wineries in the world, as every aspect of the winemaking process is still carried out in oak barrels and vats. Furthermore, every single barrel and vat is made at the winery by the cooperage team. Bodegas Muga is the only winery in Spain that employs their own master cooper, who is assisted by a team of three barrel makers. The master cooper’s son also works at the winery, and is studying to become a master cooper himself. The Mugas travel in the late fall and early winter every year to France and elsewhere to purchase oak for the year. They inspect every single tree and select one by one. The trees are fashioned into staves at the winery, and are seasoned and aged for several years at the winery’s facilities. The winery even has 50,000L vats that were assembled by the master cooper’s own hands.\r\n\r\nThe winemaking process is carried out with 100% indigenous yeasts. The winery’s barrel room is enormous and Muga employs a crew of six men just for barrel management and rackings. The racking process is completed by gravity in order to maintain the integrity of the wine. During the rackings, the wine is inspected by candlelight to watch for sediments. This way, the wines are effectively filtered naturally without the use of harmful pumps or filters that would otherwise strip the wine of its character. After the sale of Numanthia in 2007, the Eguren family founded Teso La Monja as a new challenge for the family – finding the elegance in the wines of Toro.\r\n\r\nThe family selected vineyards in the northernmost part of D.O. Toro that have a much higher proportion of rounded stones than what is typical. This produces extremely silky, elegant wines. The winemaker, Marcos Eguren, is considered by many to be the finest winemaker in Spain. The family has grown grapes in Rioja Baja since 1940, and the current generation takes advantage of a wealth of 60Ha. of vineyards that are planted in alluvial soils on the slopes of the Monte Yerga. The vines range from century old head trained Garnacha to high density plantings of Graciano and Tempranillo planted in alluvial, limestone heavy soils with a high abundance of stones. Located at high altitudes, 2000 ft. (600m) above sea level, the vineyards take advantage of very cold winters and nights, combined with warm summers – perfect conditions for the maturation of Graciano, perhaps the estate’s most important treasure.\r\n\r\nJorge Ordóñez partnered with Bodegas Ilurce after he set a goal to produce and import a 100% Graciano wine. Graciano, a variety is most often used for blending in Rioja to improve Tempranillo, is heavily planted in Rioja Baja, as it is very challenging to ripen this grape in cooler Rioja Alta. Due to its long vegetative cycle and slow maturation, Graciano, like Garnacha, requires a warmer climate to ripen. For that reason, Ordóñez and his team travelled to Rioja Baja to find a producer to partner with. At the time, the few monovarietal Graciano wines were either very expensive or very low quality, so Jorge sought to produce a high quality, price accessible Graciano for the American market.
